Back in May, my roommate and I set up a patio campsite. We were in the initial weeks of the COVID-19 pandemic, committed to hiding inside save for quick grocery trips, and still in the early stages of laughing at “bored in the house” jokes. We had no idea if we’d be able to get out camping this summer, so we set up a tent on our balcony and ignited the firepit for Explore’s Ultimate S’mores Roast-Off and Taste-Test.

SPOILER ALERT: Of the five s’mores we tasted, we came to an easy consensus on our top three. Here are the recipes to try for your next summer camping trip—whether it’s in a backcountry campsite or your own backyard.

 

 

1st Place: Chocolate Chip Cookie with Nutella S’more

This was our absolute favourite “s’more”! We purchased delicious chocolate chip cookies from Whole Foods, but I bet they’d be even better with fresh, homemade cookies! Be generous with the Nutella and enjoy...

Yield: 2 large servings

Time: 5-10 minutes (total)

Ingredients:

  • 4 homemade chocolate chip cookies
  • 2 tablespoons Nutella
  • 2 regular marshmallows (or 1 jumbo marshmallow cut in half)

Equipment:

Instructions:

  1. Begin by spreading the Nutella evenly across the bottom of all 4 cookies.
  2. Cook your marshmallow over a fire until toasted and light brown. If possible, cook slowly while rotating over the coals, rather than directly in the flame. If it catches on fire, blow out quickly!
  3. Place the cooked marshmallow on the Nutella-covered side of a chocolate chip cookie. Take a second cookie and place it on top of the toasted marshmallow, Nutella side down, and pull the marshmallow off the roasting stick to create a sandwich.

2nd Place: Graham Cracker with Cookie Butter S’more

Coming in for the bronze is Trader Joe’s Cookie Butter. I’d never tried this spread before (which apparently is amazing on toast) but the gingerbread taste complimented the toasted marshmallow and crunchy graham crackers perfectly.

Yield: 2 regular servings

Time: 5-10 minutes (total)

Ingredients:

  • 2 graham crackers
  • 2 tablespoons Trader Joe’s Cookie Butter
  • 2 regular marshmallows (or 1 jumbo marshmallow cut in half)

Equipment:

Instructions:

  1. Begin by breaking the graham crackers into 4 squares. Then, spread the cookie butter evenly across the bottom of all 4 graham crackers.
  2. Cook your marshmallow over a fire until toasted and light brown. If possible, cook slowly while rotating over the coals, rather than directly in the flame. If it catches on fire, blow out quickly!
  3. Place the toasted marshmallow on the buttered side of a graham cracker. Take a second graham cracker, place it on top of the toasted marshmallow, buttered side down, and pull the marshmallow off the roasting stick to create a sandwich.

Tip: Substitute the cookie butter for peanut butter or your favourite spread!

3rd Place: Classic Campfire S’more

The original s’more takes the third-place spot. Nostalgia hits me every time I whip up a classic campfire s’more. You don’t have to melt the chocolate first, but I think it elevates the OG s’more.

Yield: 2 servings

Time: 5-10 minutes (total)

Ingredients:

  • 2 graham crackers
  • 1 milk chocolate bar
  • 2 regular marshmallows (or 1 jumbo marshmallow cut in half)

Equipment:

Instructions:

  1. Begin by breaking the graham crackers into 4 squares. Place 2-4 squares of chocolate on two graham crackers (depending how chocolatey you want your s’more to be!).
  2. Cook your marshmallow over a fire until toasted and light brown. If possible, cook slowly while rotating over the coals, rather than directly in the flame. If it catches on fire, blow out quickly!
  3. While cooking your marshmallows, place the graham crackers with chocolate on top on a grill over/near the fire or in a pan held over/near the fire until the chocolate is slightly melted, then remove from grill/pan and plate.
  4. Place the marshmallow on top of the melted chocolate. Take a second graham cracker (without chocolate) and place it on top of the toasted marshmallow, pulling the marshmallow off the roasting stick to create a sandwich.
